The curriculum at the schooling level is slow to change, but as students will learn, climate change is a very real and very important challenge – perhaps the MOST important challenge. As an open scholar and a young adult, targeted students have a vested interest in seeking to understand and mitigate the impact of climate change, since it affects their present and also their future. As open scholars, they also get to choose what they want to learn, when they want to learn and how they want to learn. They can work through the course content alone or with others with whom they can share ideas. They can work entirely offline or entirely online or in blended mode if their local open school provides such an option.

- ItemOpen AccessCommercial Food Preparation: Local Cuisine(2016-09) TVET Unit: Ministry of Education, Innovation, Gender Relations and Sustainable Development of St. LuciaEmployers in Saint Lucia and the region continue to lament that employees lack the skills to operate productively and efficiently at the workplace. The local cuisine of a country is one of its unique selling points (USP) which sets it apart from other places and attracts visitors. As a country whose economy depends heavily on tourism, it is imperative that visitors continue to sample the appetizing foods that Saint Lucia has been known to create, both those that they may be familiar with in their home country and those that are unfamiliar. In that regard, a course in Commercial Food Preparation with an emphasis on preparing delicacies using local produce and variation in preparing imported produce will equip hospitality workers with the skills, knowledge and competencies of how to prepare our local produce and other produce using our signature methods and techniques as well as cater to the pallet of people of different cultures. This is likely to foster longevity of the local cuisine and maintain a particular standard of preparing foods. Moreover, since the course can be taken by any nationality, it will be a medium to market the local cuisine internationally. Most importantly, it is hoped that the emphasis on local cuisine will encourage practicing and up-coming food preparation personnel to develop even more creative ways of preparing our local produce.

Saint Lucia is known for its artistry in costume making for carnival and creative garment designs for the event ‘Hot Couture’. Garment production is a viable field because clothing is a commodity that is needed by everyone year round. However, there is need for fashion designers to be more innovative in their designs. A course in garment production has the potential to foster designers’ creativity by augmenting designs that already exist or crafting new ones. Upcoming designers will be given the opportunity to be trained and certified which are added boosts to their competencies and chances for employment and entrepreneurship.
- ItemMetadata onlyGood Agricultural Practices (GAP): An Introductory Course for The Bahamas(2020-06) Pierre, GinaThe Bahamas Agricultural Health and Food Safety Authority (BAHFSA) and The Ministry of Agriculture and Marine Resources (MAMR) in collaboration with Commonwealth of Learning (COL) have partnered to provide farmers with an online course on Good Agricultural Practices (GAPs). // This self-study course addresses fruit and vegetable production and is designed to inform farmers on the basic environmental and operational conditions necessary for the production of safe and wholesome produce. Fruits and vegetables are an important component of our diet. Nutritionists and health professionals have clearly shown that diets low in fat and high in fiber, with at least five servings a day of fruits and vegetables, protect us against many types of cancers and lessen the risk of heart disease. Now, more than ever, consumers listen to these messages and have altered their food choices. // In recent years, there has been an increase in food recalls due to biological, chemical and physical risks, particularly with leafy greens such as lettuce. This six-week course will help to mitigate against these risks and serve as a guide in the implementation of best management practices at all stages of the crop production and processing systems. Participants are required to commit 30 - 60 mins per week on completing the weekly presentations and assignments to successfully achieve the learning goals of this course.

- ItemMetadata onlyUsing Open Educational Resources for Online Learning – 2(2020-09) Mays, TonyWith the declaration of COVID-19 as a global pandemic in March 2020, school campuses were closed. Governments in most developing and developed countries have consequently recommended moving teaching and learning online. Even when campuses re-open, teachers and learners will probably need to continue to practice physical distancing and will need to continue to do some work online. This course, targeting teachers of primary and secondary schools, uses contemporary learning design and accessible technology to introduce participants to using Open Educational Resources for some aspects of online learning provision. The course is particularly suited for educators and will run for 2 weeks. It will require up to 3-4 hours of time for each of the 4 units. Participants will learn from readings, videos as well as discussions with fellow teachers and mentors. A Certificate of Completion will be given to those who complete all the tasks in the course.
